How industrial bratt pans work
Tecninox industrial bratt pans work with a system designed to ensure optimal temperature control and effective mixing. The special thick bottom allows temperatures of up to 160°C to be reached, maintaining an even heat distribution over the entire surface.
During the bratt cooking phase, the bottom temperature can be monitored and the speed of the scraper mixer, equipped with MOCA-certified paddles, can be adjusted to suit the different textures of ingredients such as meat and vegetables. The automatic mixing system ensures that the product does not stick to the bottom, facilitating optimal cooking.
Once the process is complete, the braising pan emits an acoustic alarm to signal the end of the process. At this point, the operator can easily empty the pot via the drain valve, ensuring rapid cleaning and preparation for the next production cycle.
